Plantain Pancakes

Plantain Pancakes have become a staple to our Saturday mornings.  You may catch them often on my Instagram account because they are my ‘splurge’.  I love how simple they are with only two ingredients, plantains and gelatin.  The trick to this recipe is to have ripe plantains.  I often get plantains when I shop on Sunday’s and use them the following weekend for pancakes/cookies.  When you mash-up a plantain, it will look like a banana mashed up.  You want to eliminate any bumps and have it almost to a liquid.  However, when you pour the batter on to the pan, it sets better than a banana.  The key is to let the pancakes cook until golden brown before flipping.  If you flip too soon, they will be mushy (which even I occasionally do by accident and we just change our pancakes to ‘mash’).

After making our pancakes, we drizzle them with maple syrup and top with ghee for an amazing breakfast!

Chunky Monkey Banana Muffins

Let’s just say, these banana muffins are freaking awesome filled with chocolate and pecans!  Not to mention, they traveled around the US to land at few of my favorite Paleo bloggers door step.  This all happened with the annual Caveman Love Muffin Exchange.  I got paired up to send 6 Chunky Monkey Banana Muffins to Nicole at Merrit and Fork, Michele at Thriving Paleo and Anne Marie at Grass Fed Salsa.  I recommend you check out their blogs to see what muffins they sent to some lucky Paleo bloggers!  Although you did not receive my muffins at your doorstep, you too can have them in your house!  And remember, you are the creator of this dish and make it to your liking (adding or omitting add-in items is ok)

Chunky Monkey Banana Muffins

Chunky Monkey Banana Muffins

Makes 12 muffins

 

Ingredients:

3/4 cup coconut flour

2 bananas smashed

6 eggs

1/2 cup coconut oil (melted)

1 tsp baking soda

1 tsp cinnamon

1/4 tsp ginger

3 tsp vanilla

1/3 cup honey

Add Ins:

1/2 cup ENJOY chocolate chips

1/4 cup chopped pecans

 

Directions:

  1. Mash the bananas in a large bowl with a potato masher. I created a banana soup mixture.
  2. Whisk in the eggs, vanilla, coconut oil, honey into the banana mixture.
  3. In a separate bowl mix the coconut flour, baking soda, cinnamon and ginger together.
  4. Add the dry ingredients in with the wet ingredients.
  5. Use a whisk to eliminate any bumps from the dry ingredients.
  6. Fold the chocolate chips and pecans into the batter.
  7. Pour into cupcake holders or into a bread pan.
  8. Bake at 350 degrees for 20-25 minutes for muffins or 30-40 minutes for bread.

Paleo Chocolate Cupcakes with Almond Butter Frosting

I do have a soft spot for sweets and seems my followers do too!  So when I get an occasion to bake a cake or make some cupcakes I usually make it happen.  This said, a coworker had her birthday yesterday and I decided to make a batch of my Paleo chocolate cupcakes with almond butter frosting.  These cupcakes are off da chain because they are sweet, but not too sweet and the chocolate and almond butter leave you with their tastes.  I HATE when I have a sweet treat and it’s way over powered by the sugar rather than the chocolate.  As though I said, “I’ll take one sugar cupcake” and in some situations I’m not sure there is difference between vanilla and chocolate other than their color.

When making the almond butter frosting.  Always keep your palm shortening at room temperature.  As you whisk, it will break down and blend into the almond butter and maple syrup.  If you want to pipe the frosting, I recommend placing it in your piping bag and then putting it in the fridge for 20-30 minutes.  This will cause the frosting to set further and make your piping look much more pretty.

Chocolate Cupcake Ingredients

4 eggs

1/2 cup maple syrup

1/2 cup coconut oil

2 tsp vanilla

1 tsp baking powder

1 tsp baking soda

1/4 cup cocoa powder

2 cups almond flour

1 tbsp coconut flour

Almond Butter Frosting Ingredients

1/2 cup palm shortening

1/2 cup maple syrup

1 tbsp tapioca flour

2 tsp vanilla

1/3 cup almond butter

Primal Life Organics – Paleo Skincare

I always chuckle when I read product reviews.  I know every body is different and each person reacts differently to products.  However, I still get sucked into reading about how a product has changed someones life.  Well, it seems the reviews for Primal Life Organics are starting to add up…and…I caved and bought into it.  Yes, I did this willingly without a 3am infomercial inspiring me.  I was drawn to the products for two reasons.  First, they use natural ingredients found in nature, which makes it a Paleo skincare company in my mind.  Secondly, they create these products in a humane way.  Both of my reasons go hand-in-hand when picking out products for my body.  When picking out my products, I ordered based on curiosity and transformation.  I was curious to see if these “all natural products” would truly work with my body.

My Journey…

Many people hate to see their pictures.  Pictures are reality and often we are trying to hide the zit on our face, the roll of fat on our arm or the extra bump we have gained due to a food baby.  I also know a picture can speak a thousand words without having one word in it.

Over the past two and half years, I have lost over 65 pounds following a Paleo lifestyle which fits me.  In the beginning of my journey to find a healthy body, I was constantly losing weight.  People would comment how great I looked and I would smile and accept their complement.  What those kind people did not know was deep down I was thinking they were crazy giving me the compliment.  I thought they were complimenting me because they noticed my drive for change and didn’t want me to become discouraged when I did not see it.  Were there physical signs I was losing weight…yes!  I loved shopping for clothes but at one point became discouraged because I would purchase a nice pair of pants and they would be too baggy two weeks later and back to shopping I went…I always knew were the clearance rack was located in my favorite stores.  I knew change was occurring when I would go shopping, but I never accepted it because I always had a mental picture of myself as the girl with the unhealthy body.
