Chicken In The Oven

As convenient as picking up a rotisserie chicken from the grocery store is, I sometimes wonder about the chicken meat I am eating.  Yes, this is my easy go-to option in a hurry.  However, when I have the time to spend on baking a chicken in the oven, the taste is amazing!  Baking a chicken in the oven does take time, but is a great meal for a cold day on the weekend.  I tend to serve a chicken on Sunday’s at noon.

I do not allow anything from my chicken to go to waste.  I dice up the meat to create a chicken salad for lunch the following day.  Then, I place the bones in a pot to simmer all afternoon to make an amazing bone broth!

ChickenOvenI found a new package of spices at the grocery store and I greatly appreciated it!  Normally I have to buy all three spices in a separate container and it gets costly.  However, now it is cheaper than ever before!!!

Chicken In The Oven

1 – 4lb whole chicken
1 TBL fresh thyme
1 TBL fresh rosemarry
1 TBL fresh sage
2 TBL olive oil
1 lemon
1 onion
1.  Preheat over to 425 degrees
2.  Finley mince all your spices together.
3.  Add spices into the olive oil to create a paste.
4.  Spread the paste all over the outside of the chicken.
5.  Cut the lemon and onion in half and place inside the chicken.  This will flavor the meat from the inside as it bakes.
6.  Place the chicken in a pan and bake for 15 minutes and 425 and then reduce heat to 380 for 55 minutes.  The chicken is ready when the juices are clear.
7.  Allow the chicken to set for 15 minutes before carving.
