Paleo Banana Bread Muffins

We rarely eat bananas in our house.  I think they are high in sugar and limit my intake with them.  Most bananas are 2 fruit servings if you consume just 1.  However, I decided my husband and brother might want a sweet treat to take out in the woods with him.  This Paleo banana bread is grain free and made with coconut flour.  I LOVE coconut flour and the health benefits it carries.

For this recipe you may eliminate 1 tsp of vanilla and replace with 1 tsp almond extract.  My future sister-in-law has a nut allergy, so I made this batch nut free.  You could also add in some pecan or walnut pieces.


Paleo Banana Bread

Makes 12 muffins
3/4 cup coconut flour
2 bananas smashed
6 eggs
1/2 cup coconut oil (melted)
1 tsp baking soda
1 tsp cinnamon
1/4 tsp ginger
3 tsp vanilla
1/3 cup honey 
1.  Mash the banana in a large bowl with a potato masher.  I created a banana soup mixture.
2.  Whisk in the eggs, vanilla, coconut oil, honey into the banana mixture.
3.  In a separate bowl mix the coconut flour, baking soda, cinnamon and ginger together.
4.  Add the dry ingredients in with the wet ingredients.
5.  Use a whisk to eliminate any bumps from the dry ingredients.
6.  Pour into cupcake holders or into a bread pan.
7.  Bake at 350 degrees for 20-25 minutes for muffins or 30-40 minutes for bread.
