Paleo Pecan Pie

Many tables around the holidays are not complete without a Pecan pie.  This recipe uses all natural ingredients to fuel your body.  I was recently at the grocery store and glanced at the pecan pie ingredients.  I ended up getting discouraged because I could only pronounce 8 words out of 32.  Yes, you saw correct.  I had no idea what I was thinking going for seconds two years ago.  Here is where I should apologize to my body…”Sorry body”!

You will need to make a pie crust for this recipe.  You can find my pie crust recipe —> Here.  However, I only baked my pie crust for 10 minutes and then filled it with Pale pecan pie filling and baked the whole pie for an additional 35 minutes.

Paleo Pecan Pie

Ingredients
1/4 cup maple syrup
8 dates (pitted)
30 whole pecans (12 for filling and 18 for decoration)
2 tsp vanilla
1 1/2 tsp cinnamon
1 tsp pumpkin pie spice
4 eggs
2 TBL coconut oil
 
Directions
1. Preheat oven to 350.
2.  Place all ingredients into a Vitamix or food processor and pure together.
3.  Pour into a pie shell.
4.  Arrange left-over pecans on the top to create a decoration

5.  Bake for 30-40 minutes.
6.  Allow pie to completely cool, prior to cutting.
