Paleo Sugar Cookies

Christmas is right around the corner and this is the time of year I love to bake cookies.  I have worked on a Paleo sugar cookie recipe for a while.  However, I think I have finally found a creation which works.  I want my cookies to resemble what I remember eating as a child.  I did not want the appearance or texture to change.  I have had several taste testers try different variations and I have created THE recipe!  Enjoy!!!!

Paleo Sugar Cookies

Paleo Sugar Cookies

Ingredients
2 cups almond flour
1 vanilla bean
1/4 tsp baking soda
1/4 tsp salt
1/4 cup honey
1/4 cup coconut oil
 
Directions
1.  Preheat oven to 325 degrees
2.  Place almond flour in a bowl.
3.  Scrap the vanilla bean to get the inside bean.  You can not substitute vanilla extract for this step.  The batter will not turn out right (I tried it).
4.  Massage the vanilla bean into the flour.  You will want the vanilla bean all separated without and clumping.  This takes me a good 3 or 4 minutes.

5.  Stir in the baking soda and salt.
6.  In a separate bowl, mix soft coconut oil and honey together.  You do not want the coconut oil in a liquid state.  Depending on your climate temperature, your coconut oil might be very soft.  If not, place it in the microwave for 10 seconds.

7.  Mix dry and wet ingredients together.
8.  Using your hands, form one large ball and then break it into 3 small balls.

9.  Place the mixture into the refrigerator for 5 minutes.
10.  Get out your rolling-pin, pans, parchment paper and cookie cutters.
11. Get one small ball and place it in between parchment paper and roll over it with a rolling-pin.

12.  Raise one sheet of parchment paper and use your cookie cutters to cut cookies.

13.  Using a small spatula, move the cookies to a pan lined with parchment paper.  I was able to get 20 cookies out of this batch.  Quantity will depend on the cookie cutter size.

14.  Bake in the oven for 9-10 minutes.  You want the cookie to have a golden brown edge.
15.  Allow cookies to cool on parchment paper, but remove from pan and place on cooling rack.  Cookies will harden as they sit.

16.  Wait 10 minutes before serving.
