Paleo Taco Skillet

I remember when I would come home, throw a box of processed food in a pan with a pound of ground beef and call it a meal!  Well needless to say, now I throw together a meal without the processed food out of a box.  I created this meal around what my mother had in her house when we visited over the holidays.  The only three required items you need for this meal to happen are: canned tomatoes with green chiles, taco seasoning and 1lb ground beef.  The rest of the meal is up to you and what you have on stock.  For this recipe I added artichoke hearts, black olives and mushrooms.  The artichoke hearts gave it a great texture and the black olives provided healthy fat.  I have used onions, celery, sweet potatoes, beets, green beans, cauliflower, or cabbage in it.  Cook all the vegetables before adding them into the mixture.  I have pre-cooked my veggies on a Sunday for an easy throw-together meal on the weekdays.

Paleo Taco Skillet

Ingredients
1lb ground beef (cooked)
1 can tomatoes with green chilles
1 TBL taco seasoning
…Add in what you have…see above
 
Directions
1.  Drain the tomatoes with green chiles and keep the juice.
2.  Take the juice and mix in taco seasoning.
3.  Stir in tomatoes, add in items and ground beef in skillet on medium heat.
4.  Pour liquid and taco seasoning over mixture.
5.  Allow it to simmer for 5 minutes.  This will allow the flavors to blend together.
 
I have poured my queso over top of the Paleo taco skillet.  If you didn’t know…I love queso and use it on top of a lot of dishes!
