I remember when I would come home, throw a box of processed food in a pan with a pound of ground beef and call it a meal! Well needless to say, now I throw together a meal without the processed food out of a box. I created this meal around what my mother had in her house when we visited over the holidays. The only three required items you need for this meal to happen are: canned tomatoes with green chiles, taco seasoning and 1lb ground beef. The rest of the meal is up to you and what you have on stock. For this recipe I added artichoke hearts, black olives and mushrooms. The artichoke hearts gave it a great texture and the black olives provided healthy fat. I have used onions, celery, sweet potatoes, beets, green beans, cauliflower, or cabbage in it. Cook all the vegetables before adding them into the mixture. I have pre-cooked my veggies on a Sunday for an easy throw-together meal on the weekdays.
