Pecan Frosting

We just got home from a quick trip up-north visiting with my family.  First, I was very proud of my mother.  Normally we arrive and the house is full of baked goods.  To my surprise…….she made us……DEVILED EGGS!  She also made a few soups both my husband and I could eat.  I was very proud of her and her progress to eat healthy.  Thanks mom!

Sometimes even Paleo people make ‘junk food’ too.  This pecan frosting is a great treat, but not something I would keep in my fridge all the time.  It is very sweet and should be consumed at something special.  I made a batch of it last night to put on top of pumpkin and banana muffins.  It was a great hit!  I think it would be amazing on top of brownies too; however, I haven’t tried it yet….

Pecan Frosting

Ingredients:
1 cup pecans
2 TBL coconut oil
5 TBL water
1/2 tsp cinnamon
1 tsp vanilla
1/4 cup maple syrup
a dash of salt
 
Directions.
1.  Place all ingredients in the blender and blend on high.

2.   Scoop out and store in the fridge.
