Easy Meal – Scallops

There are nights when I’m in a pinch for time.  I like to have my meals on the table by 6pm.  However, there are some nights when I walk into the door at 5:50pm.  When I know these nights are going to occur, I plan an easy meal.  Scallops are one of our FAVORITE meals; however, we do not indulge every week.  They are a bit expensive; however, we have started to buy in bulk and love the savings!!  I encourage you try a scallop, at first I was intimidated by them.  However, they taste amazing!!  I think they ‘melt’ away in my mouth.  Scallops pair great with any vegetable or salad.

We are not big grass-fed butter consumers; however, when cooking seafood it helps to keep the oil at a constant temperature.

When cooking scallops, I pull them out the night before and let them defrost in the fridge.  I highly recommend this method.  After 24 hours they are ready for cooking!



1lb large scallops
1 TBL coconut oil
1TBL grass-fed butter
Himalayan sea salt to taste
1.  Rinse scallops and pat dry.
2.  Sprinkle Himalayan sea salt over them lightly.
3.  Melt butter and coconut oil in pan together on medium-high heat.
4.  When hot add in scallops.  
5.  Cook for 2 minutes and then flip.  Do not check to see if they are browned until 2 minutes have passed.  You want the scallops to have a light brown color to them.
6.  Cook for 1 more minute.
7.  Serve immediately.
