There are nights when I’m in a pinch for time. I like to have my meals on the table by 6pm. However, there are some nights when I walk into the door at 5:50pm. When I know these nights are going to occur, I plan an easy meal. Scallops are one of our FAVORITE meals; however, we do not indulge every week. They are a bit expensive; however, we have started to buy in bulk and love the savings!! I encourage you try a scallop, at first I was intimidated by them. However, they taste amazing!! I think they ‘melt’ away in my mouth. Scallops pair great with any vegetable or salad.
We are not big grass-fed butter consumers; however, when cooking seafood it helps to keep the oil at a constant temperature.
When cooking scallops, I pull them out the night before and let them defrost in the fridge. I highly recommend this method. After 24 hours they are ready for cooking!
